Sangri are the long, slender bean pods of the revered khejri tree, the state tree of Rajasthan and a lifeline of the Thar. Harvesting and drying sangri is slow, careful work, which is why true sangri has always been treated as a delicacy rather than an everyday vegetable. Ramjeevan has supplied the finest grades to Jodhpur's kitchens since 1932.
Sangri is the celebrated partner of ker in Ker Sangri, the most famous dry vegetable dish in all of Rajasthani cuisine. Its gentle, nutty flavour and satisfying chew have earned it a place of pride at weddings, festivals, and the tables of those who know good food.
We select only clean, well-formed pods, hand-sorted at our Jodhpur facility. This is the sangri we are proud to serve our own guests.
How to Use
Soak overnight, boil until tender, then cook with ker, spices, and oil in the traditional Marwari preparation. A little goes a long way, and the flavour rewards patience.
Storage
Store in an airtight container in a cool, dry place, away from moisture. Keeps well for several months.
