Ker are the small, tangy berries of the hardy kair bush that survives the harshest summers of the Thar desert. For the people of Marwar, ker has never been ordinary food. It is the taste of the land itself, gathered in the dry months, sun-dried, and stored for the year ahead. Ramjeevan has been sourcing it for Jodhpur's kitchens since 1932.
Sharp, sour, and full of character, dried ker is the soul of the legendary Ker Sangri, a dish no Rajasthani wedding or festive table is complete without. It also makes a wonderful tangy pickle and a distinctive sabzi all its own.
We offer ker in two grades. The medium grade gives a fuller, meatier bite, while the small (bareek) grade is prized by traditional cooks for the deeper, more concentrated tang it lends to a dish. Both are cleaned and sorted by hand at our Jodhpur facility.
How to Use
Soak in water for a few hours or overnight, rinse well to soften the sourness, then cook with sangri, spices, and oil in the traditional Marwari style.
Storage
Store in an airtight container in a cool, dry place. Keeps well for several months.
